Vegetable is a really big portion of cooking anywhere in the world. Many times, it adds very unique flavors to many cuisines including meats. I am going to cook Beef and Radish Soup (Seogogi Mu Guk 소고기 무우) today. I have introduced a few beef cuisines on my YouTube channel, but this time, I will introduce a soup made by Beef and Radish. I am pretty much confident that you will love it! 

When you don’t feel good, Beef and Radish Soup is particularly good to make you feel better, like a chicken noodle soup in the U.S. Yes, you can add a bit of noodles in the Beef and Radish Soup. But obviously, rice is definitely the perfect match for Beef and Radish Soup.

How to Make It

 Ingredients: 350 gram of beef 400 gram of radish, 3 green onions, 1T minced garlic, 2T of soy sauce or 2T of fish sauce, 2T of cooking wine (optional), a bit of salt and pepper, 7 cups of water

Step 1: Preparing ingredients

Slice three green onions. 

Mince 5 cloves of garlic. 

Cut the radish into about a 1 inched size. And cut into a 1 inched size again. And cut it into appropriate size. It is said that radish has the effects of anticancer, detoxification, immunity improvement, digestion, and intestinal health. What a  healthy ingredient!

You can use any part of the beef. Koreans like to use brisket when they make soup. I prefer to use the soft part of the beef. So, I bought the beef chuck short ribs. Cut the beef into bite-size pieces. Rinse the sliced beef in water once. And drain the water.

Step 2: Stir-fry beef

Put the sliced beef in the pot. Add 2 tablespoons of Korean soy sauce for soup. If you don't have soy sauce, you can use 2 tablespoons of fish sauce. Add 1 tablespoon of minced garlic. If you have cooking wine, add about 2 tablespoons. If you like pepper, add a little bit. Stir-fry it well.

Step 3: Boiling

Once the meat is properly stir-fried, add about 7 cups of water. When the soup starts to boil, you can see this kind of impurities like this being released from the beef. Remove it with a ladle. And add the sliced radish. When the radish starts to boil, reduce the heat over medium. Cover the lid and boil for about 15 more minutes.

15 minutes later: Put the sliced green onions on top. You can adjust the taste at this stage. If the soup is a little bland, you can season it with salt.

Step 2: Stir-fry beef

Put the sliced beef in the pot. Add 2 tablespoons of fish sauce, 1 tablespoon of minced garlic, 2 tablespoons of cooking wine, and a bit of pepper. Stir-fry it well.

Step 3: Boiling.

Add 7 cups of water. When the soup starts to boil, add the sliced radish and reduce the heat over medium. Cover the lid and boil for about 15 more minutes. Put the sliced green onions on top.
