Waterless Boiled Pork Belly

Delicious and soft texture of pork belly

 Sometimes it’s fun to try different ways to cook well-known cuisines to upgrade its taste and texture. Today’s Korean cuisine is just that. “Boiled Pork Belly without water, musubun suyuk”, which is a bit of a different version of typical Boiled Pork Belly. Suyuk translates to “water meat” in Korean, meaning that typical Boiled Pork Belly contains quite a bit of moisture due to boiling of the pork belly in water with some sauces and ingredients. Although it is very delicious, we can try a different way of cooking to reduce quantity of moisture so that we can taste more delicious and softer texture of pork belly. Well, the question is HOW? So, here comes the solution!

Musubun Suyuk

Ingredients: 2.5lb Pork belly meat, 1 onion, 1 apple, 3 green onions, 3T cooking wine, salt

How To Make It

Step 1: Preparing meat

I washed the meat once in running water and removed the water with a kitchen towel. 

I bought pork belly with about a 2-inch thickness size. Cut it in half to fit the size of the frying pan. Sprinkle a bit of salt on the meat. Add a bit of ground pepper.

Step 2: Cutting vegetables

Cut the onion in a round shape. Cut the apple in a round shape, too. Slice 3 green onions into 2-inch sizes.

Step 3: Cooking

Put the onions on the pot. Put an apple on top of the onion. Put the meat on top of it. And put the chopped green onions on top. Lastly, if you have cooking wine, add about 3 tablespoons. (optional) 

Close the lid and cook the meat over low heat for about an hour. 

After an hour, a lot of water came out of the vegetables. Take out the meat. Take out the vegetables. It's good if you just eat it even at this stage. 

To make it more delicious, I will grill it over medium-high heat for about 5 minutes. 

Place the golden grilled meat in a bowl and cool it for about 10 minutes. If you cool it down and cut it, the juice of the meat spreads evenly, so you can cut it to look pretty. Cut the meat as thin as possible. The meat is cooked so well. Wow the inside is full of juice. 

The juicy, water-free boiled pork belly is done! It's so delicious when you eat it with thinly sliced meat with kimchi.

Notes

  • The pot or pan should have a thick bottom to prevent burning.
  • Adding apples softens the meat, and the sweetness of apples permeates the meat, making it taste better.
