Gyeran Mari, Korean Egg Roll

Popular side dish for lunch box

You might have some memories on your lunch box when you were a child or teen. Yes, I also have many memories with close friends. Today, I am going to introduce one of the most popular side dishes for lunch box. It is “Gyeran Mari”, egg roll. If you have any Korean friend around you, just ask them about this side dish and then you will hear about their memories. Well, let’s make our own memory today! 


Gyeran Mari

Ingredients: 6 eggs, 2 green onions, a bit of carrots, cooking oil, 1T milk, and a bit of salt 

How To Make It

Step 1: Cutting ingredients

Cut the green onions in half. And cut it into small pieces. If you add green onions, it will get rid of the fishy smell of the egg. 

Slice the carrots thinly. Cut it into small pieces again. If you add carrot, the color of the egg roll looks prettier. 

Tip: If you add too much vegetables, the eggs may not be well rolled, so add an appropriate amount. 

Step 2: Making Egg Wash

Put 6 eggs in a bowl. 

Add chopped green onions and carrots. 

Add about 1/2 teaspoon of salt. Add 1 tablespoon of milk. Milk makes the egg roll taste much softer. Let’s beat the eggs. 

Step 3: Grilling

This frying pan is designed for making egg rolls. If you do not have it, you can also use a round pan.  The important thing is to use a coated pan. Add a bit of oil to the preheated pan. Apply oil evenly with a kitchen towel or silicone basting brush. Pour egg wash into the pan. 

Spread the egg wash like this. In the beginning, place the heat over medium, then reduce the heat over medium low. Cook it very slowly so that the egg roll does not burn. Making a good egg roll needs patience. When the eggs are cooked to some extent, flip them like this with a spatula.


Put some oil with the kitchen towel again. Pour the egg wash and connect it with the previous end of the egg roll. This makes the egg roll to connect smoothly.  Do the rest in the same ways.

Cook the sides too. If you cook the sides, the egg roll shape becomes pretty. 

Cool the egg roll down for 1 to 2 mins. If you cool it down, it will be cut nicely.

Nowadays, most Korean students do not bring their lunch box to school, because many schools provide lunch. However, Gyeran Mari, egg roll is still a popular side dish for any kind of meal in Korea. Cooking Egg Roll is relatively easy and simple. Hope you give it a try  for today’s dinner table!

Notes

  • Green onions and carrots are typical ingredients for gyeran mari. You can also add your favorite ingredients, such as onion, mushroom, ham, etc.
  • You can add 1 tablespoon of cooking wine. Cooking wine can get rid of the fishy smell of the egg. This is optional.
