Korean Sausage Stew
Hello,
everyone! It’s so good to see you again! Last week, my husband asked me to cook
his most favorite stew, “Spicy sausage stew, Budae-jjigae. Especially many
Korean men love to eat Spicy sausage stew to remember their military service
experience. Budae-jjigae or spicy sausage stew is a type of Korean fusion dish,
made with ham, sausage, spam, baked beans, kimchi, instant noodles, and
gochujang. The dish origin was created shortly after the armistice that ended
the Korean War, using the scrounged or smuggled surplus foods from U.S.
military bases. Although the dish was born in the period of post-war poverty,
it continued to be popular during the period of rapid growth, and is still very
popular today. This cuisine is a simply perfect combination between western
processed meats and kimchi, and a comfort food cooked on the table in a big pot
in front of the diners and enjoyed as it is cooked for many Koreans. I am
pretty sure you will like it. Well let’s make it together!
Ingredients: 3 sausages,
half spam, half tofu, half onion, 2 green onions, 1 cup of sliced kimchi, half
ramyeon
Seasoning: 1T soy sauce,
1/2T red pepper paste, 1T red pepper powder, 1/2T minced garlic, 1t sugar, a
bit pepper
How to make it
Step 1: Making seasoning
Put 1 tablespoon of soy sauce in a bowl. Add 1 tablespoon of red pepper powder, half a tablespoon of red pepper paste, half a tablespoon of garlic, 1 teaspoon of sugar, and a bit of pepper.
Mix it
well.
Step 2: Preparing the ingredients
Cut the sausage diagonally. Cut the spam and the tofu into appropriate sizes. Slice the onion thinly.
Cut the green onions into 2-inch pieces.
Step 3: Placing the ingredients in a
pot
Put the onions, kimchi, spam, tofu, sausages, sliced green onions and the sauce that we made in advance.
Pour 2 and 1/2 cups of rice water. If you don't have
rice water, you can just use water or chicken broth for the extra flavor.
Step 4: Boiling
Cover the lid and cook over high heat for about 10 minutes.
10 minutes later, when all the ingredients are cooked well, add some ramyeon. You can also add rice cakes or glass noodles. This is optional. If it's a little bland, it's good to season it with a bit of salt or fish sauce.
Eat the noodles first because the noodles soak up the liquid fast
from the stew. Koreans have budae jjigae with rice. It might be a perfect
dinner.

Notes
- If you pour boiling water on spam before cooking, it's good to remove a little bit of fat and saltiness.
- How to make rice water. Wash rice well under running water, throw away the first water, and use the second water.
- If you use rice water, it is good to dilute the saltiness and fat of ham and sausage.
- You can refill with some more rice water or water if you need.
