Woo Young Woo Gimbap

Hello everyone! How are you doing these days? Recently, the Netflix K-Drama “Extraordinary Attorney Woo” has been very hot. My family members and I are also enjoying the show. One thing that caught my attention was the gimbap that Young Woo eats every morning. It looks like the perfect way to start your morning. I also want to let you all know how to make it. Hope you enjoy this recipe!
Ingredients:
5 oz
of burdock, 3 eggs, 2 handfuls of spinach, half carrot, some pickled radish,
some ham, 2 fish cakes, 3 pieces of crab meat, 2 bowls of rice, 5 sheets of seaweed
paper
How to make it
Step
1: Blanching Spinach
Add
2 pinches of salt. Blanch spinach slightly in boiling water for about 1 minute.
Wash well in cold water and squeeze to drain water completely. Add 2 pinches of
salt and add 1 tablespoon of sesame oil to the spinach. Mix it well.
Step
2: Braised burdock
Peel
the burdock. Wash the peeled burdock once. Slice them thinly and slice it into
thin slices. Add the shredded burdock to the boiling water. Boil for about 5
minutes. If you boil it, the texture gets better. After 5 minutes, drain the
burdock with a strainer. Put it back in the pot. Add 5 tablespoons of burdock
boiled water, 2 tablespoons of honey or sugar, and 2 tablespoons of soy sauce.
Mix it well. Boil over medium heat to the point where there is no moisture left
in the pot. When there is no moisture in the pot, put it in a bowl.

3: Making egg garnish
Place
3 eggs and 1 pinch of salt in a bowl. Beat the eggs well. Add a bit of oil to
the preheated pan. Wipe the oil with a kitchen towel. Pour the egg mixture and spread
evenly on the pan. Cook slowly over low heat. When the egg is cooked a certain
extent, turn it over. Cool the egg garnish down. Cut it into long pieces.

4: Cutting Ingredients
Cut
the fish cake and ham into long pieces. Cut the crab meat in half. Cut pickled
radish and the carrots into similar sizes and thicknesses.

5: Stir-frying the ingredients
Add a bit of oil to the preheated pan. Put in the carrot. Stir-fry it well. Put 1 pinch of salt. Stir-fry it on medium high heat for 1 to 2 minutes. Stir-fry the ham, fish cake, and crab meat for 1 minute. All kimbap ingredients are ready.

6: Rice seasoning
Put
2 bowls of rice in a bowl. Add 1/2 teaspoon of salt. Add 1 tablespoon of sesame
oil. Mix it well.

7: Rolling Kimbap
Make the rice about the size of a small tennis ball and put it on the seaweed paper. Spread rice as thin as possible. This is what makes the kimbap even tastier. It's better to use lukewarm rice rather than hot rice. Place the prepared ingredients on the rice one by one. Put pickled radish, the carrots, fish cake, ham, eggs, some spinach, and lastly, the burdock.
Tuck the ingredients towards the bottom of the seaweed paper and roll together. Gently press down and continue to press down the rest gently. Roll the rest in the same way. Leave a little bit of the end. This way, the rice will not come out when you roll the kimbap.
Put some sesame oil on the rice. Then the flavor of the gimbap will be much better.
Lastly, sprinkle some sesame seeds to make it savory.

Notes
- You can buy burdock at a Korean food store.
- Burdock is said to be good for improving immunity, purifying toxins in the blood, improving skin, improving constipation, and preventing colon cancer. In particular, burdock is said to be very rich in dietary fiber and low in calories among vegetables, so it is effective for dieting.
- You can use regular ham instead of Korean ham.
- The ham is seasoned, so you don't have to put extra salt.
