Kabocha Salad Recipe!

 

Nutritious Kabocha Salad 

Hello everyone! If you go to the supermarket these days, you can see a lot of pumpkins. After watching my recent potato salad video, someone said that they wanted to know how to make sweet kabocha salad. So, for today's dish, I will introduce a nutritious sweet Kabocha salad. Hope you enjoy this simple yet nutritious recipe!

Ingredients: 1 kabocha, 1/3C cranberries, 1/4C sunflower seeds, 1/3C walnuts, 2T mayonnaise, 1T honey, 2 pinches salt

How to make it

Step 1: Preparing the kabocha

Put the kabocha in the microwave. Microwave for about 3 minutes. Cut it in half. Scrape the kabocha seeds with a spoon. Cut the stem and core with a knife. Cut it to an appropriate size. Peel it. And put it in the steamer. Cover with a lid and steam on medium high heat for about 10 minutes.






Step 2: Stir-frying nuts

Put 1/3 cup walnuts in the pan. Add about 1/4 cup of sunflower seeds. Cook for about 2 minutes on medium heat.

Step 3: Adding ingredients

10 minutes later, turn off the heat if you can poke it easily with a chopstick or fork. Put the kabocha in a bowl and mash it well. Add the roasted walnuts and sunflower seeds, 1/3 cup of cranberries, 2 tablespoons of mayonnaise, 1 tbsp of honey or sugar, and 2 pinches of salt. Mix it well.






A very nutritious kabocha salad is done!

Notes

  • Microwaving the kabocha makes it easier to peel the kabocha skin later.
  • Do not throw away the kabocha seeds, but you can wash,  dry, and fry them in a pan.
  • Kabocha has the effect of helping digestion and strengthening the intestines. It is said to be good for weight loss diets because of its low calorie and high fiber content, and is said to have anti-cancer effects, improve eyesight, and boost immunity. There are many ingredients that are really good for health.
  • You can also add almonds if you like.
  • If you don't have cranberries, you can also add raisins.
  • If you add nuts to the kabocha salad, the taste and nutrition will both improve.
  • If it is a little bland, you can add a pinch of salt. If you want it sweeter, add a little more honey or sugar.
