Spicy Cucumber Salad (Oi Muchim) 

Hello everybody! This Thursday is Thanksgiving Day in America. Roasted turkey is the main food eaten on Thanksgiving, and I was thinking about what Korean cuisine would go well with Turkey cuisine, and I immediately thought that it would be really delicious to eat it with spicy and crunchy cucumber salad. Hope you enjoy this recipe! 

Ingredients: 2 cucumbers, 1/2 onion

Seasoning: 1/2T minced garlic, 1T red pepper paste, 1T red pepper powder, 1/2t salt, 1/2T sugar, 1/2T fish sauce, 1T vinegar, 1T sesame seeds

Step 1: Preparing Ingredients

Cut off a bit of stem part. Cut it in half. Remove the seeds. Cut the cucumber into slightly larger pieces to preserve the crunchy texture. Cut it a little diagonally. Cut the onion into small chunks.






Step 2: Seasoning the Cucumbers

Put cucumbers and onions in a bowl. Add 1/2 tablespoon of minced garlic. Add 1 tablespoon of red pepper paste. Add 1 tablespoon of red pepper powder. Add 1/2 teaspoon of salt. Add 1/2 tablespoon of sugar. Add half a tablespoon of fish sauce to enhance the savory taste. Add 1 tablespoon of vinegar. Add 1 tablespoon of sesame seeds. Mix it well. Add half a tablespoon of sesame oil at the end.



A very simple but tasty spicy cucumber salad is done.

  • 2 cucumbers

  • 1/2T fish sauce
  • 1T vinegar
  • 1T sesame seeds

Notes

  • The stem part has a bitter taste, so cut off a bit of it.
  • You can also remove the cucumber seeds with a small spoon.
  • Today's cucumber salad is good if you want to eat it right away. However, if you want to keep the cucumber salad a little longer, brine the cucumbers with 1 teaspoon of salt for about 10 minutes before making the salad. If you do this process, the cucumber won't have a lot of water later and you will be able to keep it for longer. 
  • Cucumbers are sometimes salted in order to preserve longer, but if you make them without brining with salt, the cucumbers will be crispier and more delicious.
  • If you don't like fish sauce, add 1 more pinch of salt.
