Tteok
Mandu Guk
Hello
K Friends! Today, I'm going to show you how to make tteokmanduguk, a delicious
soup made with chewy rice cakes and savory dumplings. It's a perfect meal that
can be enjoyed anytime. Hope you enjoy this recipe.
Ingredients:
- 7oz. tteok (Korean rice
cakes, about 2 handfuls)
- 4oz. mandu (dumplings,
about 10 small ones)
- 3 oz. beef, thinly
sliced
- 2 eggs
- 1 scallion
- 2 cloves of minced garlic
- 1 tablespoon sesame oil
- 1 tablespoon gukganjang,
soy sauce for soup
- A bit salt and pepper
to taste
- 3 cups water
Instructions:
1. Soak
the tteok in cold water for about 20 minutes to soften them.
2. Slice
the green onions thinly and cut the beef into small pieces.
3. In
a pot, heat the 1T sesame oil over medium heat. Add the minced garlic and sauté
until fragrant.
4. Add
the beef and 1T soy sauce to the pot and stir-fry until the beef is cooked
through.
5. Add
3 cups water to the pot and bring it to a boil. Cover the pot with a lid.
6. Once
the water is boiling, add the tteok and mandu to the pot. Let it cook for a few
minutes until the tteok and mandu are fully cooked.
7. Crack
two eggs and pour the beaten eggs into the pot.
8. Add
the sliced green onions to the pot and simmer for another minute or two.
9. Season
with salt and pepper to taste.
10.Ladle
the soup into bowls and garnish with chopped kim (roasted seaweed) and sesame
seeds, if desired.

Notes
- Soaking the tteok in cold water for about 20 minutes will make the rice cake soft and reduce the cooking time. This will make the rice cake soft and reduce the cooking time.
- I used store-bought mandu, but you can also use homemade ones.
