Delicious and Easy Stir-Fried Anchovies (Myeolchi Bokkeum) | 고소한 멸치볶음 | 清炒凤尾鱼😊😋

Stir Fired Anchovies, Myeolchi Bookeum

There are many different types of side dishes that can be enjoyed with rice on Korean tables. Among them, I'm going to try making one of the national side dishes, myeolchi bokkeum. With simple ingredients and adding one more type of nuts, I'll make a very savory and delicious myeolchi bokkeum. Hope you like this recipe!

Ingredients:

  • 2C dried anchovies (4 oz or 120g)
  • 10 cloves of garlic
  • 1/2C pine nuts
  • Seasoning sauce:
  • 1T soy sauce
  • 2T cooking wine
  • 1T sugar
  • 2T honey or corn syrup

Instructions

1. Thinly slice about 10 cloves of garlic.

2. Put small dried anchovies through a strainer. This removes any powdery residue, resulting in a clean stir-fry.

3. Place the dried anchovies in a preheated pan and stir-fry over medium heat for 1-2 minutes. Place the stir-fried anchovies on a plate.

4. Add 1 tablespoon of cooking oil to the pan. Add the sliced garlic and stir-fry over medium heat. Once the garlic is halfway cooked, add the anchovies and pine nuts. Stir-fry for about 1 minute over medium-high heat. Place the stir-fried ingredients back to the plate.

5. Add 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, 1 tablespoon of sugar, and 2 tablespoons of honey or corn syrup. to the pan. Boil for a short time over high heat. After boiling for a short time, pour the sauce over the fried ingredients.

6. Turn off the heat and mix all the ingredients well at this stage. Finally, put 1 tablespoon of sesame seeds. Mix well.

Very savory and delicious anchovy stir-fry is done! Enjoy it as a great side dish for rice.

How was today’s recipe? Today's myeolchi bokkeum is not too salty and even if you store it in the fridge, the myulchi won't become hard. Hope you give it a try! I’ll see you next week. Thank you! Bye bye!

Notes

  • Adding garlic to anchovy stir-fry helps get rid of the fishy smell and prevents the anchovies from getting too hard.
  • Fried garlic has a sweet taste and adds a delicious flavor to the dish.
  • To make tasty stir-fried anchovies, use small anchovies.
  • You can add your favorite nuts instead of pine nuts.
  • Since anchovies have their own salty taste, adding too much soy sauce will make it too salty.
  • Anchovies are rich in calcium, which is particularly good for bone health.
