Korean cold cucumber soup

Hello, K Friends! Today, I'm going to introduce how to make refreshing cold cucumber soup. It's a dish that you can enjoy on hot days like these. The ingredients are really simple, and it's refreshing and delicious!

Cold cucumber soup

Ingredients

  • 1 cucumber
  • some onion
  • 1 clove garlic
  • 1 red chili pepper (optional) 

Seasoning:

  • 1/2 tablespoon salt
  • 1 and 1/2 tablespoons sugar
  • 1 teaspoon minced garlic
  • 3 tablespoons vinegar (or lemon juice)
  • 1 tablespoon tuna fish sauce (or guk ganjang)
  • 2 cups of water
  • a little bit of sesame seeds for garnish

Instructions

1. Wash the cucumber thoroughly. Since the ends of the cucumber can be bitter, cut them off. Slice it thinly. Julienne it again. Thinly slice the onion as well. Finely chop 1 clove of garlic. Slice half of the red chili pepper thinly.






2. Add 1/2 tablespoon of salt, 1 tablespoon of tuna fish sauce, 1 and 1/2 tablespoons of sugar, 1 tablespoon of plum extract, and 3 tablespoons of vinegar. Mix everything well. Let it brine for about 5 to 10 minutes.





3. After 5 minutes, Pour 2 cups of cold water, sliced red chili pepper, and sprinkle a bit of sesame seeds. If you eat it as is, it can be a bit salty. Just before eating, add a few ice cubes into the bowl.


How to eat

You can enjoy it like a soup when you have rice. Or you can boil some noodles and add them to the cucumber cold soup for a satisfying meal!

  • Korean cucumbers are ideal for cold cucumber soup due to their low seed content. Substitute Korean cucumbers with English cucumbers (seedless) if unavailable.

  • Increase salt by 1 teaspoon if tuna fish sauce is not available.
  • If plum extract is unavailable, add an extra 1/2 tablespoon of sugar.
  • Lemon can be used instead of vinegar.
  • Bringing the cucumber and ingredients in advance enhances flavor.
  • Adjust seasoning to taste. Add water if it is too salty, or salt if bland.
  • Store in the refrigerator and enjoy chilled.
