How to Make Korean Spicy Marinated Raw Crab😍😋

 

 Spicy Marinated Raw Crab

Hello everyone! Recently, my daughter watched a video of spicy marinated raw crabs (Yangnyeom Gejang) on social media even though she has never tried it and she really want to give it a try. Personally, I really love seasoned soybean paste stew! It pairs so well with rice. Hope you enjoy this recipe!

Spicy Marinated Raw Crab, Yangnyeom Gejang
Ingredients:  

  • 3lbs (1.4kg) frozen crab (2 packs)
  • 1/2 onion
  • 2 spring onions
  • 1 red chili pepper
  • a little ginger
  • 6 cloves garlic
  • 1/2C cooking wine
  • half a pear

 Seasoning sauce:

  • pear juice
  • 1/2C red pepper flakes
  • 1/2C soy sauce
  • 3T fish sauce
  • 6 cloves of garlic
  • 1/2C rice syrup  
  • 1 tablespoon sesame seeds 

1. These are frozen flower crabs purchased from the Korean market. Thaw them under running water. When you do this, the crabs that were stuck together will automatically separate as they melt. Once you have thawed the crabs quickly, put them in a colander to drain off the excess moisture.




2. Cut off the legs with no meat at the ends using scissors. Also, cut off the ends of the pincers. The legs of the crabs are the parts with no meat.


3. Pour about half a cup of mirin or cooking wine over the cleaned crabs. Mix well. Leave them in the freezer for about 20 minutes.


4. Cut 2 spring onions into appropriate sizes. Also, slice the onion into suitable sizes. Thinly slice the ginger. Finely chop about 6 cloves of garlic. Slice one red chili pepper thinly.




5. Peel the pear and grate or blend it well.



6. How to make the seasoning sauce

Put the grated pear in a bowl  

1/2C red pepper flakes (gochugaru)

1/2C soy sauce

3T tuna fish sauce or fish sauce

2T minced garlic

1/2C rice syrup

some sliced ginger

1T sesame seeds Mix well.



7. After 20 minutes: These are the crabs that were left in the freezer. Take them out and put them in the seasoning sauce. Add the sliced onion, spring onion, and red chili pepper. Mix well with a spoon or spatula. Transfer to a serving dish.



8. Storage method: Put the well-marinated crabs in a container. They are delicious right after making, but they taste even better if you put them in the refrigerator and let them age for 1-2 days. I recommend consuming them within a week when stored in the refrigerator at the temperature just before freezing.

9. How to eat: You can eat it with rice. Alternatively, you can press the crab to extract the meat. Place the crab meat on top of the rice and sprinkle some of the sauce from the seasoning over it. It tastes delicious when mixed well or wrapped in seaweed.

Notes

  • Pouring cooking wine over the frozen crabs and leaving them in the freezer for 20 minutes will help remove any fishy smell and make the crab meat firmer.
  • The ginger slices will be put in the seasoning sauce, and when they are marinated, they will reduce the spiciness and enhance the flavor of the crab seasoning sauce.
  • Adding aromatic vegetables like garlic, ginger, and spring onions to the seasoned crab helps reduce the fishy taste.
  • Adding pear juice enhances the sweetness and adds depth to the flavor.
  • Adding rice syrup provides sweetness and glossiness. If you don't have rice syrup, you can use corn syrup or oligosaccharide.
  • By lightly freezing the crabs before marinating them, the meat adheres well to the crab and is easier to eat.
