Kale Side Dish, Kale Namul 

Hello, everyone! I hope you're all doing well! Recently, I had a lot of kale in my refrigerator and I was wondering what to make with it. Then I thought of making kale namul, similar to spinach namul, as a side dish. Namul is a broad term used to describe a flavorful vegetable dish that has been seasoned. So I tried making kale namul, and my family loved it so much that I thought I should share the recipe with all of you. Hope you enjoy this healthy recipe!

Spicy Kale Namul & Mild Kale Namul

#1 Mild Kale Side Dish (Kale Namul)

Ingredients:

  • 200 grams kale
  • 1 white part of green onion
  • 1 clove  garlic

Seasoning

  • 1T fish sauce (or gukganjang)
  • 1T sesame oil
  • 1T ground sesame seeds
  • 1T chopped green onion

Instructions

1. Add 1 teaspoon of salt to boiling water. Put the kale in the boiling water and cook for about 5 minutes.

2. After 5 minutes, transfer the blanched kale to cold water and rinse it once or twice. Drain the water.


3. Squeeze the blanched kale with your hands to remove excess water. Cut the kale into 1-inch lengths. Place it in a bowl.

4. Cut the white parts of green onions in half and finely chop them. Also finely mince 2 cloves of garlic.


5. How to make seasoning: Add 

  • 1T tuna fish sauce
  • 1t minced garlic
  • 1T chopped green onions
  • 1T sesame oil 
  • 1T ground sesame seeds. 


Mix well.

6. When seasoning the kale, make sure to thoroughly mix it so that it doesn't clump and the seasoning is evenly distributed. If it's slightly bland, add a pinch of salt. Mild kale side dish is done!

Mild Kale Side Dish, Kale Namul

#2 Spicy Kale Side Dish (Spicy Kale Namul)

Ingredients

  • 200 grams kale
  • 1 white part of green onion
  • 1 clove garlic

Seasoning

  • 1T fermented soybean paste
  • 1/2T red pepper flakes (or red pepper paste)
  • 1 teaspoon of minced garlic
  • 1T sesame oil
  • 1T ground sesame seeds
  • 1T chopped green onion
  • 1t plum extract or sugar

Instructions

1. How to make seasoning: In a bowl, add

  • 1T fermented soybean paste
  • 1/2T red pepper flakes 
  • 1T ground sesame seeds
  • 1t minced garlic 
  • 1T chopped green onions
  • 1T sesame oil 
  • 1t plum extract
  • 1t sugar


2. Slice well-squeezed kale into 1-inch lengths. Place the sliced kale into the seasoning sauce that you prepared a little while ago.


3. Likewise, when seasoning the kale, make sure to thoroughly mix it so that it doesn't clump and the seasoning is evenly distributed. If it's slightly bland, add a pinch of salt. Transfer to a serving bowl and enjoy. 


Very simple and healthy kale side dishes are done! 

Spicy Kale Side Dish, Spicy Namul

How to eat:

You can simply eat it with rice, or you can place the kale side dishes on top of the rice and add a fried egg if available. Add about 1 teaspoon of gochujang (red pepper paste) and a little bit of sesame oil. Mix it well, then this will be kale bibimbap.

Notes

  • Adding salt when you blanch the kale will enhance the color of the kale.
  • If you're vegetarian or don't have fish sauce, you can use 1 tablespoon of soy sauce instead.
  • You can also use gochujang (red pepper paste) instead of red pepper flakes for more spicy kick.
