Korean Spicy Chewy Noodles (Jjolmyeon)
Hello K Friends! Today, I'm going to introduce you to one of Korea's popular noodle dishes, Jjolmyeon. Jjolmyeon is known for its incredibly chewy noodles that are mixed with a tangy, sweet, and spicy sauce along with various vegetables. Hope you enjoy this recipe!

Ingredients
- 14 oz Jjolmyeon noodles
- 5 oz soybean sprouts
- Some cabbage, carrot, and cucumber
- 1 boiled egg
Seasoning Sauce
- 2T gochujang (red pepper paste)
- 1T gochugaru (red pepper flakes)
- 2T soy sauce
- 3T vinegar
- 1T sugar
- 2T honey or corn syrup
- 1t minced garlic
- 1T sesame oil
- 1T sesame seeds
How to make seasoning sauce
In a bowl, add
- 2T gochujang (red pepper paste)
- 1T gochugaru (red pepper flakes)
- 2T soy sauce
- 3T vinegar
- 1T sugar
- 2T honey or corn syrup
- 1t minced garlic
- 1T sesame oil
- 1T sesame seeds
Mix well.
Vegetable
preparation
Thinly slice
the cabbage, cucumber, and carrot.
This is
Jjolmyeon that I bought from a Korean grocery store. Since it's frozen, you can
leave it at room temperature for about 2 hours before using it, and the noodles
that were stuck together will automatically separate.
Add about 2
handfuls of soybean sprouts to boiling water. Open the lid and blanch them for
about 2 minutes.
After 2
minutes Take the soybean sprouts out and rinse them in cold water. And then
drain the excess moisture.
Put the
Jjolmyeon in the boiling water that was used to blanch the soybean sprouts.
Stir occasionally over high heat and cook for about 5 minutes.
After 5
minutes
Rinse the
Jjolmyeon several times in cold water to remove excess starch. If you have ice,
add it while rinsing. Drain the rinsed Jjolmyeon.
How to plate
Put the
jjolmyeon and the blanched soybean sprouts in a bowl. Pour about half of the
pre-made seasoning sauce first. Mix well.
Place an
appropriate amount in a bowl. Place the sliced vegetables on top, making it
look nice. If you have boiled eggs, cut one and place it on top. Add a little
more seasoning sauce if it is necessary.
The sweet,
tangy, and spicy flavors are amazing! Very delicious Jjolmyeon is done!

Notes
- The sauce used in Jjolmyeon tastes even better when it's marinated! You can make it in advance the day before and keep it in the refrigerator for later use.
- If you don’t have plum extract, you can use apple juice instead.
- Jjolmyeon should have a slightly sweet and tangy taste.
