Enoki Mushroom
and Egg Recipe
Hello, K Friends! Today, I want to introduce a dish called
Enoki Mushroom Pancake (enoki egg recipe). A few days ago, I poured egg mixture
over enoki mushrooms and cooked it in a pan, and they turned out so savory and
tasty. It's really easy to make, but the taste is excellent. Hope you enjoy
this recipe!
Ingredients:
- 2 packs enoki mushrooms (10 oz)
- 4 eggs
- 1 green onion (optional)
Dipping
sauce:
- 2 tablespoons soy sauce
- 1 tablespoon water
- 1 tablespoon vinegar
- 1 teaspoon sugar or honey
How to make dipping sauce: In a bowl, mix 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp water, and 1 tsp honey or sugar.
Thinly slice
green onion for garnish. If unavailable, skip.
Enoki
Preparation:
Use two
packs of enoki mushrooms and cut the ends.
Hold and
rinse under water. Shake off excess water.
Press with a
towel to dry.
Egg Mixture:
In a bowl, whisk 4-5 eggs with a pinch of salt.
Cooking: Heat
1 tbsp oil in a pan. Add enoki, pour some egg mixture over. Shape.
Cook on medium-low until golden brown on bottom. Flip once.
Once fully
cooked, move to plate.

Notes
- Adjust salt if not using soy sauce and add pepper to taste.
