Seaweed soup, Miyeok guk
In Korea, the first meal a
mother eats after giving birth is seaweed soup (Miyeok guk). Seaweed soup is
rich in nutrients that help a mother's health. Eating this food on birthdays is
meant to show gratitude for the seaweed soup the mother ate at birth and to
wish for good health and well-being.
Beef Seaweed Soup, Miyeok Guk |
Ingredients: (For 4
servings)
- 1oz (30g) dried seaweed
- 7oz (200g) beef
- 1 small onion
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce for soup
- 2 tablespoons fish sauce
- 1 tablespoon minced garlic
- 1t salt
- 8 cups of water
Soak some dried seaweed in
cold water for about 20 minutes.
Cut the beef into
appropriate sizes, not too thick, and against the grain for a tender texture.
Once the seaweed is well
soaked, rinse it once or twice. Squeeze out the moisture, then cut it into
suitable sizes.
In a pot, add 2 tablespoons
of sesame oil and the seaweed. Stir-fried well. Add 1 tablespoon of minced
garlic. Add 2 tablespoons of soy sauce for soup and 2 tablespoons of fish sauce
and stir-fry over high heat until the meat turns brown. Add about 8 cups of
water and a small onion and let it simmer to enhance the broth's flavor. Boil
with the lid off until the broth starts to bubble.
When the broth starts to
boil, cover the lid and simmer on medium heat for about 20 minutes.
After 20 minutes, remove the
onion and add 1 teaspoon of salt. Season with salt to taste. Very nutritious
and delicious seaweed soup is done!
