  • A bit of onion
  • 1 egg
  • 1/2t salt
  • A little pepper

Instructions

Potatoes and Onions: Shred 2 potatoes (use a chopper if available). Thinly slice a bit of onion and one green onion (both optional).

Combine potatoes and onions in a bowl. Add 1/2 teaspoon of garlic salt (or regular salt) and mix. Let sit for 5 minutes.

Mixing: Squeeze out excess water from the potatoes. Add 2 tablespoons of starch powder and the green onion. Mix well.

Cooking: Heat a pan with 1 tablespoon of oil. Spread the potato mixture in the pan, leaving space in the middle for the egg.

Cover and cook on medium-low for 5 minutes. Flip the mixture, remove the lid, and cook for another 2 minutes.

Add a little more oil and crack an egg into the space. Season with a pinch of salt and pepper. Cook until the egg white is almost set.

Serving: Transfer to a plate. Enjoy the creamy egg yolk and savory potatoes! Perfect for breakfast or brunch!
