 6 Easy and Delicious Cucumber Salad 

Recently, my daughter saw a cucumber side dish trending on social media and really wanted to try it, so I made it for her. Now I understand why it’s so popular! It’s really easy to make and so delicious! You should definitely give it a try too! Hope you enjoy😊

#1 Korean Style Cucumber Salad

Ingredients

  • 1 cucumber
  • 1T gochugaru (Korean red pepper flakes)
  • 1T soy sauce
  • 1T fish sauce
  • 1T vinegar
  • 1T sesame oil
  • 1T sugar
  • 1T sesame seeds
  • 1 clove garlic

Instructions

Step 1: Slice one cucumber using a slicer and place the slices in a container with a lid.

Step 2: Add 1 tablespoon each of red pepper powder, soy sauce, fish sauce, vinegar, sesame oil, sugar, and sesame seeds to the container.

Step 3: Grate one clove of garlic and slice a bit of red onion. Add both to the container.

Step 4: Close the lid and shake well to evenly coat the cucumber slices. Enjoy your crunchy, delicious cucumber salad!

#2 Gochujang Cucumber Salad

Ingredients

  • 1 cucumber
  • 1T soybean paste
  • 1T gochujang (Korean red pepper paste)
  • 1T soy sauce
  • 1T honey or sugar
  • 1T vinegar
  • 1T sesame oil
  • 1T sesame seeds

Instructions

Step 1: Prepare a container with a lid. Use a slicer to slice one cucumber. Be careful when slicing the ends. Slice 1 green onion and a small amount of regular onion. Add both to the container.

Step 2: Add 1 tablespoon each of the following ingredients: soybean paste, gochujang (Korean red pepper paste), soy sauce, honey or sugar, vinegar, sesame oil, and sesame seeds.

Step 3: Close the lid tightly and shake the container well to mix all the ingredients evenly. Open the container and enjoy your crunchy, delicious cucumber mix!

#3 Kimchi Cucumber Salad

Ingredients

  • 1 cucumber
  • 1/2 cup of kimchi
  • 1T soy sauce
  • 1T sesame oil
  • 1T sesame seeds
  •  1T sugar

Instructions

Step 1: Get a container with a lid. Slice one cucumber using a slicer and place the slices in the container. Add about half a cup of sliced kimchi to the container.

Step 2: Add 1 tablespoon each of soy sauce, sesame oil, sesame seeds, and sugar to the container.

Step 3: Close the lid tightly and shake the container well to mix all the ingredients evenly. Open the container and enjoy your flavorful cucumber and kimchi salad. The Korean flavors really shine through, and it would be perfect to eat with rice!

#4 Healthy Cucumber Salad

Ingredients

  • 1 cucumber
  • 1 small container of plain yogurt
  •  half a lemon
  • 1T honey
  • 1/2t salt

Instructions

Step 1: Take one cucumber and slice it using a slicer. Place the slices in a container with a lid.

Step 2: Add a small container of plain yogurt to the cucumber slices. Squeeze in the juice of half a lemon.

Step 3: Add 1/2 teaspoon of salt and 1 tablespoon of honey to the container.

Close the lid tightly and shake the container well to mix everything together.

Open it up and enjoy your refreshing, healthy, and crunchy cucumber salad. It's so tasty, you'll want to keep eating!

#5 Chili Crunchy Cucumber Salad

Ingredients

  • 1 cucumber
  • 1T peanut butter
  • 1T soy sauce
  • 1T vinegar
  • 1T sugar or ½T sugar
  • 1T sesame seeds
  • 1T chili oil
  • 1 clove garlic

Instructions

Step 1: Take one cucumber and slice it using a slicer. Place the slices in a container with a lid.

Step 2:  Add 1 tablespoon each of peanut butter, soy sauce, vinegar, sesame seeds, and chili oil to the container. Add 1 tablespoon of sugar. Grate 1 clove of garlic and add it to the mixture.

Step 3: Close the lid tightly and shake the container well to mix all the ingredients evenly. Open the container and enjoy!

#6 Fish Sauce Cucumber Salad

Ingredients

  • 1 cucumber
  • 2T fish sauce
  • 2T vinegar
  • 1T sugar
  • 1T sesame seeds
  • 1t minced garlic
  • 1 red chili pepper

Instructions

Step 1: Get a container with a lid. Use a slicer to slice one cucumber, being careful when cutting the ends. Place the slices in the container.

Step 2: Add 2 tablespoons of fish sauce, 2 tablespoons of vinegar, 1 tablespoon of sugar, and 1 tablespoon of sesame seeds to the container.

Step 3: Slice 1 red chili pepper and grate 1 clove of garlic. Add both to the container. Close the lid tightly and shake the container well to mix everything evenly. Open the container and enjoy! It’s super savory, crunchy, fresh, and tangy—so yummy!
