Chicken Pancake, Dak Pajeon
Hello K Friends! How are you
doing? Hope you are doing very well! Today, I’m excited to share chicken
pancake (Dak Pajeon) with you, a dish that many people in Korea say is even
better than fried chicken. It’s super tasty and really easy to make! Hope you enjoy!😊
Ingredients
- 1lb (450g) chicken thigh or breast
- 3 green onions
- 6 tablespoons potato starch
- 3-4 tablespoons water
- A pinch of salt and pepper
- 2 tablespoons cooking wine (mirin)
- 1 tablespoon minced garlic
- 1/2 tablespoon chicken powder
- Cooking oil
Dipping Sauce
- 2T soy sauce
- 1T sugar
- 1t minced garlic
- 2T lemon juice or vinegar
Instructions
Chicken Thighs: Trim excess fat from Costco chicken thighs and cut them into bite-sized pieces. Use a food processor to chop, but leave some texture for better taste.
Seasoning: Mix the minced chicken with 3 pinches of salt, pepper, 2 tbsp cooking wine, and 1 tbsp minced garlic. Marinate for 10 minutes.
Green Onion: Slice 3 green onions thinly. Finely chop a red chili pepper, if using.
Batter: Add the chopped green onions and red chili to the chicken. Mix in 4 tbsp of potato starch, and optionally, 3 tbsp of breadcrumbs for crispiness. Add 1 tsp of chicken powder and 3-4 tbsp of water. Mix thoroughly.
Dipping Sauce: Combine 2 tbsp of soy sauce, 1 tbsp of sugar, 1 tsp of minced garlic, and 2 tbsp of lemon juice or vinegar.
Pan-Frying: Preheat a pan with oil. Place spoonfuls of the batter and flatten them. Cook on medium-low until both sides are golden brown.
Finish: Garnish with drained green onion strips for a nice presentation (optional). Enjoy your savory chicken pancakes!
