Doraji Namul (Stir-fried bellflower roots)
Doraji Namul, Stir-Fried Bellflower Roots |
Soft and savory doraji
(bellflower root) namul is a healthy side dish. Lightly stir-fried to bring out
its rich umami flavor, it pairs perfectly with rice. Make this delicious dish
with wholesome ingredients and enjoy it with your family.
Ingredients
- 2 oz (50g) dried doraji (bellflower roots)
- 2 tablespoons salt (1 for soaking, 1 for rubbing)
- 2/3 tablespoon tuna fish sauce (or a pinch of salt)
- 1/2 tablespoon sesame oil
- 1/2 tablespoon cooking oil
- 1 tablespoon chopped green onions
- 1 teaspoon minced garlic
- 1 tablespoon ground sesame seeds
- ¼ cup kelp water or water
Instructions
Step 1
Place the doraji in a bowl,
add 1 tablespoon of salt, and pour warm water over it. Soak for about 10 hours.
(Tip: Soaking in salt water helps remove the bitterness and improves the
flavor.)
Step 2
Drain the soaked doraji, then rub it with 1 tablespoon of salt. Rinse it in cold water and squeeze out the excess moisture.
Step 3
In a pan, add the doraji,
2/3 tablespoon of tuna fish sauce (or a pinch of salt), 1/2 tablespoon of
sesame oil, 1/2 tablespoon of cooking oil, 1 tablespoon of chopped green
onions, and 1 teaspoon of minced garlic. Mix well.
Step 4
Stir-fry over medium-low
heat. (Tip: If it starts to dry out, add a little kelp water for extra moisture
and flavor.)
Step 5
Cover and cook for 2 minutes, then add 1 tablespoon of ground sesame seeds and mix.
