AUTHENTIC Korean Chicken Stew, Dak Hanmari 🐔🍲😋

Dakhamari

Today, I’m going to show you a super tasty dish called “Dakhanmari.” We’ll cook a whole chicken to make a warm and tender soup. It stays hot and delicious the whole time you eat! It’s a dish that everyone, young and old, will love.

Ingredients:

For the Chicken:

  • 1 medium-sized chicken
  • 1 potato
  • 2 green onions
  • 1 onion
  • A small amount of ginger
  • 10 garlic cloves
  • About 20 whole peppercorns
  • 1 cup of soaked glutinous rice or kalguksu noodles (optional)
  • 10–12 cups of water (enough to cover the chicken)

For the Sauce:

  • 4 tbsp chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp vinegar
  • 1 tbsp sugar or allulose
  • ½ tbsp minced garlic
  • 1–2 tbsp red pepper flakes
  • 1 tsp mustard
  • A small amount of grated onion (optional)

Step 1: Prepare the Chicken

Trim visible fat, especially from the tail and wing tips. Cut the chicken in half, wash it thoroughly, and remove any blood clots.


Step 2: Blanch the Chicken

Slice a small piece of ginger. Add the ginger to boiling water and blanch the chicken for 5 minutes to reduce odor and fat.


Step 3: Prepare the Broth Ingredients

Quarter one onion and cut 2-3 green onions in half. Crush several garlic cloves. Prepare about 20 whole peppercorns.

Step 4: Boil the Chicken

After 5 minutes blanching, discard the water and transfer the chicken to a pot. Add fresh water to cover the chicken, along with the onion, green onions, garlic, and peppercorns. Boil on medium-high heat for 30 minutes.


Step 5: Prepare the Vegetables

Thinly slice one potato and a large green onion (or regular green onions). Shred some cabbage and thinly slice an onion. Chop some chives.


Step 6: Make the Sauce

In a small bowl, combine:

  • 4 tbsp chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp vinegar
  • 1 tbsp sugar or honey
  • ½ tbsp minced garlic
  • 1-2 tbsp red pepper flakes
  • 1 tsp mustard
  • Some grated onion

Step 7: Finish Cooking the Chicken

After 30 minutes, skim off the fat from the broth. Remove the vegetables, return the chicken to the pot, and add the potatoes, green onions, and chives.





Season with ½ tbsp salt and ½ tbsp chicken powder. Adjust seasoning with more salt (1t) if needed. Boil for an additional 5-10 minutes.



Step 8: Serve

Drizzle the sauce over the prepared vegetables and enjoy with the chicken.

Bonus Step: 

After eating the chicken, add soaked glutinous rice or cold cooked rice to the remaining broth to make porridge. Alternatively, you can enjoy the broth with knife-cut noodles. After 20 minutes, wow, the aroma is amazing! Enjoying it this way is both comforting and absolutely delicious!
