Stir-Fried King Oyster Mushrooms

I actually enjoy this more than bulgogi. The king oyster mushrooms (Saesongyi Beoseot Bokkeum) are so savory and chewy, and they soak up the sauce perfectly. It’s simple, healthy, and full of flavor—so satisfying without any meat.
Ingredients:
- 10 oz (300g) king oyster mushrooms
- ¼ onion (sliced)
- ¼ carrot (sliced)
- 2-3 green pepper (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp oligosaccharide or honey
- 1 tsp minced garlic
- A pinch of black pepper
Instructions:
Step 1
Wipe clean with a damp paper
towel and cut into bite-sized pieces.
Step 2
Cut onion, carrot, and green
peppers
Step 3
In a bowl, mix 2 tbsp soy
sauce, 1 tbsp oyster sauce, 2 tbsp oligosaccharide or honey, 1 tsp minced
garlic, and a pinch of black pepper.
Step 4
Heat oil in a pan, cook mushrooms until golden, then add vegetables. Pour in the sauce, stir well, and cook until everything is coated and glossy. A chewy, umami-packed stir-fry is ready!
