Kimchi Quesadilla

What happens when crispy, cheesy quesadillas meet spicy, tangy kimchi? You get a flavor explosion that’s crunchy on the outside, gooey on the inside, and packed with bold, irresistible taste! This quick & easy recipe is perfect for a snack, lunch, or whenever you’re craving something deliciously different!

Ingredients:

  • 1 large tortilla
  • 2 oz (50g) mozzarella cheese
  • 2 slices of cheddar cheese
  • 1 scallion
  • ½ cup kimchi

Instructions

Step 1

Add a little oil and ½ cup of chopped kimchi, ½ tablespoon of sugar. Stir-fry over medium heat. Once the moisture has evaporated and the kimchi is well cooked, transfer it to a plate.




Step 2

Melt a little butter in a pan and place one tortilla. Add 2 slices of cheese first, then a suitable amount of stir-fried kimchi. Sprinkle a generous amount of mozzarella cheese and finish with chopped scallions.


Step 3 

When the bottom is golden, fold the tortilla in half and cook slowly over low heat until the cheese is completely melted.


Step 4 

Once the cheese has melted, the kimchi quesadilla is complete! Use a knife or a pizza cutter to cut the quesadilla into three pieces. Enjoy! Tip: Use leftover gochujang mayo sauce as a dip for tortilla chips!
