Quick and Easy Tteokbokki
Hi everyone! Do you love tteokbokki? Today, I made a
simple yet incredibly delicious tteokbokki using leftover sliced rice cakes
from the fridge. Sliced rice cakes cook quickly and absorb the seasoning
perfectly, giving them a soft and chewy texture that’s hard to resist. It’s
perfect as a quick snack or a hearty meal. I hope you’ll try making it too!
Ingredients
- 1 lb (450g) sliced rice cakes
- 4 oz (110g) sliced beef
- 5 green onions
- A bit carrot
Seasonings
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 2 tablespoons corn syrup (or honey)
- 1 teaspoon minced garlic
- 2 tablespoons red pepper powder (gochugaru)
- 1 tablespoon red pepper paste (gochujang)
- A pinch of black pepper
- 2 tablespoons cooking wine (optional)
Instructions
Step 1: Mix all sauce ingredients in a bowl until well
combined.
Step 2: Heat 1 tbsp of cooking oil in a pan. Add the
chopped green onions and stir-fry until fragrant.
Step 3: Pour the sauce into the pan and stir for 1-2
minutes. This step enhances the flavor. Add 1 cup of water and bring the sauce
to a boil. Adjust the consistency by adding more water for a thinner sauce or
simmering longer for a thicker sauce.
Step 4: Add the sliced beef, carrots (or other
vegetables), and rice cakes. Lower the heat to medium and add the tteokguk
tteok. Simmer until the rice cakes are soft and the sauce has thickened.
Step 5: Once the sauce has thickened and the rice cakes
are perfectly cooked, your tteokbokki is ready to serve.
