Fresh Young Napa Cabbage Salad 

Geotjeori (๊ฒ‰์ ˆ์ด) is a type of fresh, quickly-seasoned kimchi thats especially delicious when made with tender young napa cabbage in the spring. Unlike traditional kimchi thats fermented over time, geotjeori is enjoyed fresh crunchy, juicy, and lightly tangy with a burst of flavor from garlic, green onions, and a touch of fish sauce. It's a perfect side dish when napa cabbage is in season: refreshing, vibrant, and packed with natural sweetness. This salad-like kimchi pairs beautifully with grilled meats, warm rice, or simple soups. It’s the taste of spring on a Korean table!

Ingredients:

  • 1 lb (450g) young napa cabbage
  • 1/2 small onion
  • Some chopped chives or green onions
  • 3 tbsp red pepper powder
  • 1 tbsp minced garlic
  • 1/2 tsp grated ginger
  • 3 tbsp fish sauce
  • 1 tbsp plum extract or honey
  • 1 tbsp toasted sesame seeds
  • 1 tbsp sesame oil

Instructions:

Step 1

Prepare cabbage – Rinse 3 times, drain well, and cut or tear into bite-sized pieces.

Step 2

 Slice some onion and some chives or green onions  In a bowl, mix 3 tbsp red pepper powder, 1 tbsp minced garlic, 1/2 tsp grated ginger, 3 tbsp fish sauce, 1 tbsp plum extract or honey, 1 tbsp sesame seeds, and 1 tbsp sesame oil.



Step 3

Mix salad – Add cabbage and sliced vegetables, then toss until evenly coated. Sprinkle ½ tbsp sesame seeds on top and enjoy your refreshing, crunchy salad!
