Jeyuk Bokkeum is a bold,
flavorful Korean dish made with thinly sliced pork marinated in a spicy, savory
sauce, then stir-fried to perfection. The sauce—made with gochujang (Korean red
chili paste), garlic, soy sauce, and a touch of sweetness—coats every bite with
deep umami and satisfying heat. It’s rich, smoky, and perfect with a bowl of
warm rice. Whether served on a sizzling pan, in lettuce wraps, or packed in a
lunchbox, Jeyuk Bokkeum brings comforting spice and a burst of flavor to any
Korean meal.
Ingredients:
- 1 lb (450g) thinly sliced pork belly (pat dry and cut)
- 2 tbsp sliced green onion
- 2 tbsp sliced onion (about ½ onion)
- 1 tbsp cooking oil
- 2 tbsp corn syrup or oligosaccharide
- 1 tbsp sesame seeds (for garnish)
Sauce:
- 1 tbsp gochujang (Korean red pepper paste)
- 2 tbsp red pepper powder
- 2 tbsp tuna fish sauce
- 2 tbsp soy sauce
- 1–2 tbsp sugar
- 2 tbsp plum extract
- 2 tbsp mirim (cooking wine)
- 1 tbsp minced garlic
- ½ tsp grated ginger
- ¼ tsp black pepper
- 1 tbsp sesame oil
Instructions:
Step1
Make the sauce – In a bowl,
mix 1 tbsp gochujang, 2 tbsp red pepper powder, 2 tbsp tuna fish sauce, 2 tbsp
soy sauce, 1–2 tbsp sugar, 2 tbsp plum extract, 2 tbsp mirim, 1 tbsp minced
garlic, ½ tsp grated ginger, a bit black pepper, and 1 tbsp sesame
oil.
Step 2
Prepare ingredients – Slice
3 green onions and ½ onion. Cut pork into bite-sized pieces.
Step 3
Stir-fry pork – Heat 1 tbsp
cooking oil in a pan, add pork, and pour in the sauce. Stir-fry over high heat
for 4 minutes.
Step 4
Add sliced green onion and
sliced onion, stir-fry for 1 more minute.
Step 5
Add 2 tbsp corn syrup, toss
well, and sprinkle 1 tbsp sesame seeds on top. Spicy, sweet, and savory
stir-fried pork is done!
