 Korean Spicy Dried Squid Strips

Ojingeochae Muchim, Spicy Dried Squid Strips

Spicy Dried Squid Strips (Ojingeochae Muchim) is a popular Korean side dish made with chewy dried squid and a sweet and spicy sauce. The squid is softened with mirim, stir-fried, then mixed with a gochujang-based sauce. It’s flavorful, not too hard, and goes great with rice. You can keep it in the fridge for a few days and it still tastes great!

Ingredients:

  • 7 oz (200g) dried squid strips
  • 5 tbsp mirim (3 tbsp for squid, 2 tbsp for sauce)
  • 2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp red pepper powder
  • 2 tbsp gochujang (Korean red pepper paste)
  • 2 tbsp plum extract
  • 2 tbsp corn syrup or honey
  • 1 tbsp cooking oil
  • 1 tbsp sesame seeds

Instructions:

Step 1

Mix dried squid with 3 tbsp mirim. If the strips are too long, trim them with scissors. Stir-fry on medium heat for 1–2 minutes, then set aside.


Step 2

In the same pan, heat 1 tbsp oil and mix 2 tbsp mirim, 2 tbsp sugar, 1 tbsp soy sauce, 1 tbsp red pepper powder, 2 tbsp gochujang, 2 tbsp plum extract, and 2 tbsp corn syrup. Simmer until bubbling, then turn off heat and let it cool slightly.



Step 3

Add squid to warm sauce and toss until evenly coated. Sprinkle 1 tbsp sesame seeds and enjoy your soft, flavorful spicy dried squid!
