The Ultimate Spicy Pork Bibimbap

Do you love spicy pork stir-fry? It’s already delicious, but
mix it with these veggies, and it turns into the best bibimbap I’ve had
recently! Hope you enjoy!
Ingredients:
- 1 lb. (450g) pork belly
- Cooked rice (as needed)
- ¼ head cabbage
- 3 green onions
- ½ onion
- 10 perilla leaves
Seasoning Sauce:
- 2 tbsp sugar
- 2 tbsp gochugaru (Korean red pepper flakes)
- 3 tbsp mirim (cooking wine)
- 2 tbsp tuna fish sauce
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp plum extract
- 1 tbsp gochujang (Korean red pepper paste)
- 1 tbsp minced garlic
- 1 tsp minced ginger
- A bit of black pepper
- Additional Ingredients:
- 2 tbsp corn syrup
Instructions
Step 1. Seasoning Sauce
Mix 2 tbsp sugar, 2
tbsp gochugaru, 3 tbsp mirim, 2 tbsp tuna fish sauce, 3 tbsp soy sauce, 1 tbsp
sesame oil, 2 tbsp plum extract, 1 tbsp gochujang, 1 tbsp minced garlic, 1 tsp
minced ginger, and black pepper.
Step 2. Preparing the Vegetables
Thinly slice ¼ cabbage,
microwave for 3 minutes, then cool. Diagonally slice 3 green onions, cut ½
onion thick, and thinly slice 10 rolled perilla leaves.
Step 3. Stir-Frying the Pork
Slice 450g (1 lb) of pork belly
thinly. Heat a pan with oil, add the pork, and cook lightly. Pour in the sauce
and stir-fry on high heat. When nearly done, add onion and green onion,
stir-fry for 2 more minutes, then mix in 2 tbsp corn syrup. Finish with sesame
oil and sesame seeds. Enjoy your glossy, flavorful spicy pork stir-fry!
Step 4. Assembling Spicy Pork Bibimbap
Add rice to a bowl, top
with steamed cabbage, spicy pork, and perilla leaves. Finish with sesame seeds
and a drizzle of sesame oil.
